Cinnamon oat pancakes

Ingredients

Dry ingredients

3/4 cup oats
3/4 cup multigrain flour/ Whole wheat/ gluten free flour blend
2 tsp baking powder
1 tsp cinnamon
1 tbsp coconut sugar or 1/2 tbsp jaggery
1/4 tsp salt

Wet ingredients

1 egg
1 cup almond milk
3 tbsp unsalted butter

Instructions

  1. Combine dry ingredients in a bowl
  2. Combine wet ingredients in a bowl
  3. Pour the wet ingredients into the dry ingredients and stir to combine
  4. Let rest for 10-15 minutes
  5. Heat a tsp of oil or unsalted butter in a griddle
  6. Put three tbsp of battle in the griddle at a time - cook each side for 3-4 minutes, until the pancake is golden-brown
  7. Eat warm with toppings of choice - fruit, maple syrup, honey, dry fruit
