
Jaggery & Sesame Chkki

Jaggery & Sesame Chikki Recipe recipe by @earth_oven_bakery
INGREDIENTS:
1β2 cup sesame seeds
1β3 cup powdered jaggery or shakkar
1 tsp ghee
1β3 tsp sea salt and a sprinkle of cayenne pepper (optional)
STEPS:
- Grease an oven tray or an 8x8 baking tin with a some ghee or oil and set aside
- Toast sesame seeds in a pan over medium-low heat until golden-brown and set aside to cool
- Add ghee and jaggery in a pan over medium heat and keep stirring. The jaggery will quickly change colour (become a darker caramelized colour) and start bubbling
- A quick and easy way to check if itΚΌs caramelized, is to use a spoon to drop a few drops into a glass of cold water. If it solidifies and forms a ball, itΚΌs ready
- Turn the heat off and quickly stir in the roasted sesame seeds
- Pour onto the greased pan and smooth out to form an even layer
- Optional: Sprinkle sea salt and cayenne pepper over the top for some extra zing
- Let it cool completely and cut by scoring the chikki with a sharp knife and breaking it along the ridges using your hands
- Store in an airtight container
