
Vegan Quinoa Cookies

Quinoa flour is the perfect gluten-free alternative for baking!
Renowned as a super grain, it is rich in protein and contains all 9 amino acids.
It even has twice as much fiber as compared to other grains.

VEGAN QUINOA COOKIES by @earth_oven_bakery
DRY INGREDIENTS:
3⁄4 cup quinoa flour
2 tbsp jaggery
1⁄2 tsp sea salt
1⁄2 tsp baking soda
Chocolate chips (optional)
WET INGREDIENTS:
1⁄2 cup almond butter/ peanut butter
2 tbsp maple syrup
1 flax egg (mix 1 tbsp ground flax seeds with 3 tbsp water and refrigerate for 10
minutes)
STEPS:
- Preheat your oven to 218-degree celsius
- Line a baking sheet with parchment paper and spread 3⁄4 cup quinoa flour on it.
- Place in the preheated oven for 10 minutes until the flour turns golden. This will remove any bitterness in the quinoa flour. Take it out and let it cool
- Combine dry ingredients
- Combine wet ingredients
- Mix dry and wet ingredients together and stir in chocolate chips
- Scoop 1 tbsp of batter per cookie onto the baking sheet
- Bake for 7-10 minutes, until lightly browned
- Cool and enjoy! These cookies are soft and will melt in your mouth
