Vegan Quinoa Cookies

VEGAN QUINOA COOKIES by @earth_oven_bakery

 

DRY INGREDIENTS:

3⁄4 cup quinoa flour
2 tbsp jaggery
1⁄2 tsp sea salt
1⁄2 tsp baking soda
Chocolate chips (optional)

WET INGREDIENTS:

1⁄2 cup almond butter/ peanut butter
2 tbsp maple syrup
1 flax egg (mix 1 tbsp ground flax seeds with 3 tbsp water and refrigerate for 10
minutes)

 

STEPS:
  1. Preheat your oven to 218-degree celsius
  2. Line a baking sheet with parchment paper and spread 3⁄4 cup quinoa flour on it.
  3. Place in the preheated oven for 10 minutes until the flour turns golden. This will remove any bitterness in the quinoa flour. Take it out and let it cool
  4. Combine dry ingredients
  5. Combine wet ingredients
  6. Mix dry and wet ingredients together and stir in chocolate chips
  7. Scoop 1 tbsp of batter per cookie onto the baking sheet
  8. Bake for 7-10 minutes, until lightly browned
  9. Cool and enjoy! These cookies are soft and will melt in your mouth
