
Four ingredient banana oatmeal muffins

Your friendly and versatile (because you can substitute for all ingredients) breakfast muffins.
We love them fresh out of the oven, dipped in bowls of milk. Packed with protein, they’re a perfect start to your day.
Ingredients
- One egg (OR: 1/4 cup yoghurt - I haven’t tried this but I’m told it works)
- One tablespoon to 1/3 cup gur* (finely chopped)/honey - depending on the amount of sweet you like. We use 1 tbsp.
- One banana, mashed (or apple/pear/blueberries)
- One cup oat flour or oats (you can substitute whole wheat flour (atta) or any other flour if you’re out of oats)
Prep time: 10 minutes
Bake time: 20 minutes
Makes 6 muffins
Directions
- Preheat the oven to 350 f (175 c)
- Whisk the egg and gur/honey together
- Add the mashed banana and whisk until well combined
- Add the oat flour and slowly mix until just combined (try not to over mix)
- Scoop into an oiled muffin tin and bake for 20 mins
- Eat warm ❤️ *gur will give the muffins a rich fragrant taste, so if you’re not a fan of the smell of gur, use honey. Add 1/3 tsp cinnamon- this makes it divine.
